Purple Sweet Potato Cheesecake

Figuring out that diet and sweets basically dont match exactly. I suppose many are facing these problems. Its a life long battle for people who loved to eat. But we all also that the speed of our in take can never defeat the little calories we burned at gym. 

I only need 15 mins to intake 600 Calories EASILY.. hahha 
But I would requires load of work hard, an hour ish of high intensity workout in a gym class or 1.5hrs jog. 

So being a baker, I would definitely love to eat what I have made and created in my kitchen. Counting calories isn't really the best. 



Thats why I have made a very healthy complex carbs dessert to replace BUTTERCREAM. 

This is the closest texture that can be piped into flowers that I like to recreate. 
This flowers have taken the pastries industry by storm. They have always been popular but ever since the Korean reinvent the way they look from the American style. 
Everyone is basically posting and learning this style of decoration techniques.

At first I was worried how the turn out will be, 
end up the silky texture and light cheesecake blends in really well. At least my family thought so. 
Maybe will try with Chiffon cakes too.

For me: it's a Delicious Chocolate Cake







Have always been afraid in making CHOCOLATE WHOLE CAKES. reason, I have tried and fail, recipes that requires boiling water, oil etc,, you name it.. all the recipes I have tried looks damn promising. But dont know why, it just fail on me in the past. So I shy away from chocolate sponge cake for quite sometime. I only make chocolate cake from butter, never I thought recipe like (these, below) using mainly eggs will work so well. Its a japanese recipe I got it. and I have make it into whole cakes and cupcakes, I had 3 in a go.! its really a delicious chocolate cake for me. Yums.







Recipe for a 18cm Cake. or ~ 15Cupcakes

35g Cake Flour
50 g Cocoa Powder
100g Chocolate cubes (<55%)
80g Unsalted Butter
40g Caster Sugar
4 Egg Yolks
50g Whipping Cream

4 Egg Whites
90g Caster Sugar

Method:
Preheat Oven to 170DegC, get your pans ready line with parchment paper.
Sift the flour and cocoa powder twice.
Melt the chocolate and butter, then add yolks, sugar and cream and mix well to combine.
Make the meringue, Beat Egg Whites until foamy, then add the sugar and beat till stiff peaks!
Add only 1/3 of meringues to yolk batter, fold in to loosen the yolk batter. Then add the remaining in 2 additions, also by folding in just enough to incorporate.
Bake for about 50Mins for whole cake, and about 190degC for 15-20Mins for cupcakes. Baking time will vary according to your oven. Check the done-ness yourself with your instinct .. ^.^

Simple Love Story: A Seaside Cake




It's for 19th Feb, I love baking for special occasions. It gives me additional boost to plan, design and execute the cake. As me and my Bf had just came back from a beach getaway. I thought why not a beach theme cake, since I yet to make before. I used crushed digestive biscuits as the sandy beach. Some two tones blue colored cream cheese frosting and simple piping to depict those lovely waves. I love deep blue sea, but I personally dislike to eat too much coloring. So I always try to use minimum but at same time try to achieve the color I want (give & take abit). I made a 3 tier cake to make it look impressive. A very simple Chocolate recipe for a moist and fluffy cake (which I will post soon). The cake is sandwiched by a vertical rainbow layer cake. The usual horizontal one are #mainstream =P . I think the appearance of this cake is by far my most beautiful looking piece. And I am very pleased about it. Baking makes me happy. I really really want to pursue this path, finger crossed I am heading LeCordonBleu to learn it professionally.

Pineapple Tarts 2014



Some of my relatives love flacky chewy texture pineapple pastry. Some loves melt-in-the-mouth ones. I personally prefer the melt-in-the-mouth. These little ones are flacky types which are quite suitable for open face design. Because of the texture it can be hold and grip without shattering into mini bits. So I made about 700pcs or so for about 6-7days in total, from purchasing of ingredients to making the dough, chilling them in fridge before they can be used.  Its definitely not easy as I have spent whole 12 hours rolling the dough, weighing           the pineapple fillings. Each individual are like newborns for a baker. =)

Bottled Rare Tofu Cheesecakes





Love this recipe because instead of full favor from just cream cheese, the tofu and yogurt gives this dessert a very smooth and creamy yet LIGHT and refreshing.

Tiramisu In Pretty Party Cups.

The making of Tiramisu, Jamie Oliver recipe. I have repeated made and used his recipe. Its really simple to make. And when chilled overnight the taste of the mascarpone cheese is unbeatable. !! I am not a coffee drinker, so whenever I want to indulge in coffee desserts. This is the only dessert I crave very much.
