For me: it's a Delicious Chocolate Cake







Have always been afraid in making CHOCOLATE WHOLE CAKES. reason, I have tried and fail, recipes that requires boiling water, oil etc,, you name it.. all the recipes I have tried looks damn promising. But dont know why, it just fail on me in the past. So I shy away from chocolate sponge cake for quite sometime. I only make chocolate cake from butter, never I thought recipe like (these, below) using mainly eggs will work so well. Its a japanese recipe I got it. and I have make it into whole cakes and cupcakes, I had 3 in a go.! its really a delicious chocolate cake for me. Yums.







Recipe for a 18cm Cake. or ~ 15Cupcakes

35g Cake Flour
50 g Cocoa Powder
100g Chocolate cubes (<55%)
80g Unsalted Butter
40g Caster Sugar
4 Egg Yolks
50g Whipping Cream

4 Egg Whites
90g Caster Sugar

Method:
Preheat Oven to 170DegC, get your pans ready line with parchment paper.
Sift the flour and cocoa powder twice.
Melt the chocolate and butter, then add yolks, sugar and cream and mix well to combine.
Make the meringue, Beat Egg Whites until foamy, then add the sugar and beat till stiff peaks!
Add only 1/3 of meringues to yolk batter, fold in to loosen the yolk batter. Then add the remaining in 2 additions, also by folding in just enough to incorporate.
Bake for about 50Mins for whole cake, and about 190degC for 15-20Mins for cupcakes. Baking time will vary according to your oven. Check the done-ness yourself with your instinct .. ^.^
